We didn’t set out to make a treat. We set out to make broth worth six hours on the stove, then pour it into little bones that only set in the cold. No shelf. No shortcuts. Just the fridge, and Lolo waiting next to it.

Simmer
Chicken feet and knuckles, six hours, a low flame. That’s where the collagen comes from.

German chamomile goes in, the broth goes into bone moulds, and the cold does the rest.
